Piña Colada Balls

July 10th is National Piña Colada Day 2019 for the United States. The piña colada is a famous beverage that originated in Puerto Rico at the Caribe Hilton Hotel claiming Ramón \”Monchito\” Marrero created it in 1954. Rather than having a highly sugary drink to celebrate the day, why not try this delicious energy ball with simple ingredients recipe.

Ingredients:

  • 1 cup pineapple, diced
  • 1/2 cup coconut flour
  • 2 cups toasted coconut
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon hemp seeds
  • 1/2 tablespoon chia seeds
  • 1 cup dates, soaked
  • Food processor
  • Two medium size bowls

Directions:
First, place dates in the food processor, pulse dates until creamy. Next place coconut flour, vanilla, hemp/chia seeds, pineapple, and 1 1/2 cups of shredded coconut.

Pulse until dough-like consistency forms.

Next, place the dough into a separate bowl.

\"\"

Begin forming the roll into balls. Should yield about 15 to 20 balls.

In the second bowl, place the remaining shredded coconut. Toss the rolled balls into the bowl with the remaining coconut.

Place in refrigerator until dough sets.
