Chocolate Covered Popcorn

Do you need a last minute dessert to bring to a Holiday Party? This simple three-ingredient recipe is the perfect sweet treat during the winter. Why not place the chocolate popcorn in festive bags or even in drop in a wrapped mason jars for gifts. You can use either white, dark, or milk chocolate to the popcorn for this recipe. The recipe below a simple version, but you can get creative with your favorite holiday flavors like peppermint or adding colored melted chocolate.

Ingredients:

  • Popcorn Kernels (or pre-made popcorn)
  • Chocolate wafers/melting chocolate
  • Coconut Oil/Butter
  • Parchment Paper
  • 2 sauce pan with a lid
  • Large bowl

Directions:
First, you have to pop the kernels. Coat the bottom of a sauce pan with kernel on stove with 1 to 2 tablespoons of coconut oil or butter.

Place a lid on the pan and wait to hear the kernel pop.

Once they pop, place in a large bowl to cool.

Start a double boiler to melt chocolate. Create a double boiler by filling a pot about 1/4 full with water and bring to a boil. Reduce the heat to a simmer and fit the bowl into the pot. The bottom of the bowl should not reach the water (at least 2? to 3? space between the bowl and water is optimal). Add chocolate pellets to the top pan.

Keep the pan on low and stir the mixture until the chocolate is completely melted.

***Note: if you think the double-boiler is too complicated, you can also place melting chocolate in the microwave and mix every 30 seconds until the chocolate is melted.

Pour the melted chocolate on top of the popcorn.

Mix the chocolate with the popcorn with a spoon or your clean hands.

Once the chocolate is completely mixed with the popcorn, place the mixture on parchment paper on a flat surface.

For additional Holiday flare, you can melt colored chocolate to place on top on the chocolate popcorn.

Once everything has dried, place in bags or jars and wrap to prevent it from becoming stale.
