One Pan Oven-Roasted Chicken with Carrots and Potatoes

Do you want a simple meal ready for family dinner? One pan oven-roasted chicken thighs is a simple and health meal to feed the whole family. The preparation is minimal, but the results are delicious. Try this one pan oven-roasted chicken thigh.

Oven-Roasted Chicken Thigh Dinner Recipe:

Ingredients:

  • Chicken thighs (or chicken breast)
  • Sweet potatoes
  • Yukon Gold potatoes
  • Rainbow carrots
  • 4 tablespoons olive oil
  • pinch of salt
  • pinch ground black pepper
  • 1 tablespoon grated Parmesan cheese (optional)
  • Parchment paper or aluminum foil
  • Sheet pan 9×13?

Directions:
Preheat oven to 400°F (200°C) for 15-20 minutes. While the oven is preheating, peel potatoes. In this recipe I added a radish for some extra nutrients.

Peel and cut carrots to bite size pieces.

Cut potatoes (and radish) into cubes.
\"\"

Wrap aluminum foil on the top side of the pan. Mix chicken thighs, potatoes, and veggies in oil with salt and pepper. Place chicken thighs, potatoes, and veggies on pan. Place in oven.

Bake for about 25-30 minutes. Then broil for 2-3 minutes to make it crisp. Remove from oven. Cover with foil and allow to rest for 5-10 minutes while the juices settle before serving.

Serve hot. Add additional salt and pepper depending on preference.
